Asparagus is grown from crowns. The portion we eat is the rapidly emerging stems that arise from the crowns in early spring. Asparagus must be cut within a day or so after emergence; stems that are not cut early will be tough an stringy. Notice the scale-like modified leaves that define the nodes on the stems above.
