The Irish potato is an unexpanded underground stem that is botanically a tuber. The dimples on the surface of the potato, the "eyes", are actually lateral buds. Potatoes are genetically very diverse. They may have smooth skins or rough ones (russet types); they may have white, yellow, orange or purple flesh.
